Spicy Thai Pumpkin Soup | Young Living Oil Recipe

Here is a recipe I concocted Last year for our YL Open Day. The Thai Pumpkin Soup!

You can get YL Cumin Oil in the US (not in Australia) so if you don't want to do a US order you can just substitute with a tsp of dried cumin...

Ingredients:

  • 1tbsp coconut oil
  • 1kg pumpkin, peeled, seeded, and cut into small pieces
  • 1 medium brown onion, chopped
  • 4 garlic cloves minced
  • 3 tbsp Thai red curry paste
  • 3 drops YL Coriander EO
  • 2 drops YL Cumin EO (or tsp of ground cumin)
  • 1/2 tsp salt
  • Extra chili flakes if you like spicy
  • 4 cups vegetable broth
  • 1 cup full fat coconut milk or cream
  • Pumpkin or Hemp seeds and coconut yogurt for garnish

Directions:

  • Heat oil in a large pot over medium heat
  • Add onion, garlic, curry paste, Coriander EO, Cumin EO, salt, and chili to the pot
  • Stir for 2 minutes then add pumpkin
  • Cook, stirring occasionally until onion is tender
  • Add vegetable broth
  • Bring mixture to boil, reduce heat, and simmer until pumpkin is soft
  • Once cooked, add coconut milk and blend carefully in Thermomix or blender until smooth
  • Serve with a garnish of pumpkin or hemp seeds and a swirl of coconut yogurt

Serves 4 people.
