Over the years I have made this uncredible Raw Pad Thai w Satay Sauce recipe to go on any recipe cooked or raw.

And when I say raw, I mean an EPIC salad that's filled with carrots, cucumber, capsicum, corn, beans, fresh herbs of mint, coriander, and spring onions. All cut up sprinkled seasoned with salt and pepper and sprinkled with great intention and showed in this epic creamy satay sauce.

One of the key ingredients that work well in this masterpiece is ginger. And it's not one of those ingredients that are proudly stacked up in your local supermarket 24/7. It's rare at the best of times when in season. Ginger really brings this recipe home to a beautiful feeling of being in Asia and it’s one of the culinary oils that YL does really well.

INGREDIENTS

For the veggies:

●1 carrot, shredded

●5 long beans, sliced into bite-size pieces*

●1 cup of mung bean sprouts

●1/2 cucumber, cut into thin strips

●1/2 capsicum, cut into thin strips

●3 spring onions, sliced into rings

●1 corn cob, kernels removed

●1 cup coriander, tightly packed and roughly chopped

●1 cup Vietnamese mint leaves 

●Salt and black pepper, to taste

●1 tbsp #FORGIVENESS


For the almond dressing:

●1/2 cup almond butter

●1/3 cup raw cashews

●A pinch of cayenne pepper

●2-3 drops of Young Living Ginger Oil (do 2 then taste before adding a third) 

●1 tbsp sesame oil

●2 tbsp tamari

●2 tbsp honey, maple syrup, or coconut sugar

●1 cup of water 

●Salt and black pepper, to taste

METHOD

To prepare the veggies:

●Add all the veggie ingredients to a bowl, season well, and set aside.

To prepare the dressing:

●Add the ingredients to your Vitamix and blend until smooth and creamy. 

●Taste and adjust the seasonings if needed.

●Flood the veggies with the dressing and toss to combine.

●Serve and enjoy!
